System description

Ventilation in the cooling carousel of 160 m - with the option of extending it to 200 m

Task

Cooling of 3,000 kg wheat bread within 45 min with a cooling from + 95° to + 35° with an evaporation of 80 - 120 kg water per hour.

Solution

Custom-built ventilation unit, dimensioned for extraction of 10,000 m3/h and injection of 15,000 m3/h. The unit is made with outer cladding in aluzinc sheet and the inner cladding in stainless ss304. The unit is fitted with filters, a cross exchanger, heating surface for water, cooling surface for water/glycol, chamber fans, section for UV light, as well as valves for extraction, fresh air intake and recirculation and finally the supply-end filter to room.


The unit is delivered in one section, and placed on a galvanised console on the roof.


In the room, vertical stainless steel ducts are mounted with punched slots, so that the injected air irradiates the entire cooling carousel. All ducts in the room are in 2 parts, so they can be separated for cleaning.
